Beef Information
When considering a larger, boxed purchase the first thing to think about is how much freezer space you have.
Approximate sizing for portions of beef
Portion of Beef |
Weight |
Freezer space required |
Eighth of beef |
40 - 60 lbs |
2 cubic feet |
Quarter of beef |
80 - 100 lbs |
4 cubic feet |
Half of beef |
150 - 170 lbs |
8 cubic feet |
Whole Beef |
325 - 375 lbs |
15 cubic feet |
The weights listed above are approximate, because one never knows precisely how much the beef will weigh until it comes back from the processor. Normally a 1000 pound cow should end up as approximately 350 pounds of beef cuts. However, my cows tend to weigh 250 - 300 pounds of beef cuts.
The next important question is: What cuts will I get?
Here is a breakdown of cuts that are typically available:
Ribeye Steak |
Sirloin Tip Roast |
Flank Steak |
Stew Meat |
NY Strip Steak |
Rump Roast |
Skirt Steak |
